Fruit Cups

Everyone has a childhood memory of a food that was just right for a warm summer day.  I grew up spending every summer swimming at a local pool. This treat was often awaiting me in the freezer when I returned home.  This is also a great treat to put in lunch boxes in a hot-cold container. 

Fruit Cups
3 cups water
1 ½ cups organic sugar (Truvia could be used)
1 can (12 oz.) frozen orange juice
1 can (12 oz.) water
1 can (20 oz.) crushed pineapple
1 pkg. (10 oz.) frozen or fresh strawberries,  thawed
1 cup blueberries
1 cup grapes
1 can (16 oz.) mandarin oranges
4 bananas
9 oz.  plastic cups with wide tops ( about 13 cups)


Combine 3 cups water and sugar in a pot.   Heat on stove until the sugar dissolves.  Allow mixture to cool.  Once the mixture is cool, add orange juice and additional water.   Then cut fruit into bite size pieces and add to mixture.   Stir well.   Scoop mixture into cups with soup ladle.   Freeze and enjoy.

Peanut Butter Balls

One of my family's favorite treats are Peanut Butter Balls.  In fact, my kids beg me to make these over cookies.  I do happily because they don't know how good they actually are for them.
 
Peanut Butter Balls

1 C honey

1 1/2 C peanut butter (creamy works best)
1 t vanilla

3/4 C instant non-fat dry milk
1 1/2 C oats
1/4 C wheat germ
1/2 C chocolate chips (optional)

Combine honey, peanut butter and vanilla.  Mix dry ingredients in another bowl and then add to honey mixture.  Roll into balls and store in an air tight container in the refrigerator.  They will keep for a couple of weeks.
